When somebody offers me fruit or veggies from his garden, I immediately try to think ways to use them. For example a few days ago our neighbour Penny gave us grapes and green beans. We ate most of the grapes and with the rest I made this delicious appetizer! I didn’t want to cook the beans as a salad or braised with tomato as we use to here in Greece. I wanted to develop a new recipe. This is how I came up with the idea of makin a green bean augratin. Of course it is vegan, light and healthy but most of all it is absolutely mouthwatering! Even my husband enjoed this dish although he is not a green bean fan!  I paired them with caramelized onions, a rich herbed soy cream and an almond crust and the result was a tasteful dish! You need to try this one people! If you do, let me know what you think! I would also like to underline that the looks of this dish is not as good as its taste! So never judge a book by its cover! You see some dishes are not photogenic at all…

Ingredients (serves 2-3):
700 gr. green beans, cooked al dente and drained
1 garlic clove, finely chopped
1 large onion(180 gr.)
2+2+1 Tbsp olive oil
200 ml soy cream
2+2 Tbsp nutritional yeast
2 Tbsp mustard
fresh herbs (basil, mint, parsley, peppermint)
2 (30 gr.) rusks or bread crumbs
1/3 cup (45 gr.) almonds
1 Tbsp sesame seeds
salt and pepper

Instructions:
Grease a heat proof dish (20*30). In a bowl place beans, garlic, pour 1 Tbsp olive oil, season with salt and water. Transfer beans in the baking dish. In a non sticking pan heat 2 Tbsp olive oil. Cook onions for about 30 minutes on very low heat until caramelized (that is brown and shrunk). Place them over the beans. In a blender beat soy cream, mustard, herbs, 2 Tbsp olive oil, 2 Tbsp nutritional yeast, salt and pepper until well combined. Spread the cream over the beans-onions. In a blender pulse almonds, rusks and the rest of the yeast. Sprinkle these crumbs over the beans along with the sesame seeds. Cover with an aluminium foil and bake in preheated oven at180C for 20 minutes. Then uncover an dbake for another 10 minutes. Serve when cool. Enjoy!
