Green avocado salad with roasted cherry tomatoes

Good morning, my dear friends! Today I am sharing with you another salad recipe. I just noticed that there are more than 100 salad recipes in this blog! The number is impressive, don’t you agree? Salads give space to our fantasy and allow us to experiment a lot. This is really exciting. So today we are making a green salad with avocado, cherry tomatoes, pistachios, scented with rosemary. It is a healthy, delicious salad that I am sure it will impress your guests not only with its taste but also with its beauty!

Πράσινη σαλάτα με αβοκάντο κ ψητά ντοματίνια

Ingredients:
green salad leaves, radicchio
1 medium ripe avocado (1/2 sliced, 1/2 diced)
2 tsp vinegar
2 +1 Tbsp olive oil
fresh rosemary, finely chopped
2 Tbsp pistachios
salt and pepper
5 cherry tomatoes
1 gralic clove, minced
1 Tbsp balsamic cream

Instructions:
In a bowl place cherry tomatoes. Season with salt flakes, pepper, rosemary. Pour 1 Tbsp olive oil and balsamic cream and use your hands to coat everything. Transfer the tomatoes to a baking pan lined with parchment paper and roast in preheated oven at 200C until their flesh wrinkles. Allow to cool. Combine vinegar with 2 Tbsp olive oil. In a platter place green salad leaves, diced avocado and radicchio. In the middle place avocado slices and cherry tomatoes. Top with pistachios, rosemary and pour the dressing. Enjoy!
