Greek style baked okra

Browsing our blog archives we recently realised that we have not posted many simple, popular clasical greek dishes. In our attempt to invent new combinations and to develop new recipes we have neglected some really yummy dishes. We will make it up tou, no need to worry! So today we are cooking an amazing vegan dish with okra baked in a rich tomato sauce. Older cooks  used to fry okra and then cook it in a pot with tomatoes as a stew. I prefer the oven version. Much healthier and easier! I personally go crazy for okra. Yesterday I deavoured 1.5 dish and then my belly got swollen even more! The funny thing about my pregnancy is that I have cravings for healthy food. The other day I resisted a pasta dish but could not say no to lentils! This traditional okra dish is worth trying, my dear friends!

Ingredients (serves 3-4):
1 kg okra
2 carrots, sliced
1 big onion, sliced
3 garlic cloves, minced
1/2 bunch parsley, finely chopped
2 tomatoes, diced
600 gr. tomato juice
8 Tbsp olive oil +1/2 glass of water
salt and pepper

If using fresh okra, place them in a baking dish, pour a little vinegar and let them in the sun for 1-2 hours. Then add the rest of the veggies. Season with salt and pepper. Pour tomato juice and water. Mix well with your fingers until well combined. Bake in preheated oven at 200 C for about 50 minutes. Enjoy!
