Hello, my dear friends! Today we are cooking a delicious pasta dish and we are using a very special kind of pasta made with a variety of veggies. Eutuxia is the owner of a small company that produces pasta and jams of very high quality. She is a very kind and sweet person and she really loves her job! That shows if you try her delicious homemade products. She uses excellent ingredients and producessmall quantities. The strawberry jam we tried was absolutely divine! You could feel the taste of fresh strawberries and it was by far the best storebought jam we have ever tried! You can find her delicious products here!

Χυλοπίτες Πανδαισία Λαχανικών

2 Tbsp olive oil
1/4 cup onion
1/4 cup eggplant
1/4 cup zucchini
1/4 cup green pepper
2 sun dried tomatoes
1 Tbsp mint
1 Tbsp basil
1 cup chilopitaki (greek kind of pasta)

Finely chop all the veggies and herbs. Saute garlic with onion, peppers and sun dried tomatoes. Then add eggplant, zucchini and 1/2 cup water. When water is evaporated, add pasta and some hot water as if you were ccoking risotto. Stir often. Add another 1/4 cup water. When absorbed, keep on adding water and stirring until pasta is cooked. Serve immediately!
This pasta is made from tomato, spinach, leek, carrot, ginger, pumpkin and orange! It surely is tasteful! Enjoy!
