Ingredients: (serves 2)
400 gr. gnocchi
5-6 portobello mushrooms
A handful of walnuts
Half a bunch of parsley
2 Tbsp pine nuts
1 small cup evaporated or fresh milk
Olive oil
Salt and pepper

Directions:


Wipe off the mushrooms with a slightly damp paper towel. Use the tip of a small spoon to scrape away the gills of the mushrooms. Place walnuts and pinenuts in a food processor and blend (I prefer them not totally ground, since I want to get a crunchy taste). Then blend portobellos.
Heat 2 Tbsp of olive oil in a frying pan and add the grated mushrooms, walnuts, pinenuts, finely chopped parsley and a little water. Cook until all liquids are absorbed. Then pour some evaporated milk and let come to a boil for almost 2 minutes. Cook gnocchi according to package instructions. When ready, add them in the sauce and mix well. Season with salt and pepper.Serve with grated parmesan…
If some sauce is left, keep it in the fridge. The day after heat it adding some milk and serve with penne.
The walnut-pinenut-parsley quantities can be changed depending on your taste!
