Kale is a really healthy vegetable that has gained popularity these past few years. It is very high in beta carotene, vitamin K and C and calcium. It is great in salads and makes perfect chips. We are really happy to present a new greek company that produces amazing kale chips. Rho Foods, a company establish in 2014, chooses the best ingredients and creates delicious snacks that are good for our health and our taste buds! Eaten as a snack or in salads, sandwitches, even used as topping (see the recipe below) they are amazing! We loved all three flavours: cheesy taste, curry magic or chilly.

Ingredients (serves 3):

500 gr. gnocchi
Kale chips curry [rho] Wholesome Foods
10 cherry tomatoes, finely chopped
250 gr. white mushrooms,  finely chopped
1 medium onion,  finely chopped
2 garlic cloves,  finely chopped
4 Tbsp olive oil
salt and pepper

2 Tbsp olive oil + 2 Tbsp balsamic cream

Instructions:

In a bowl place tomatoes, garlic, onion and mushrooms. Season with salt and peppper. Coat with 4 Tbsp olive oil and toss. Transfer veggies on a baking dish lined with parchment paper and bake in preheated oven at 200 C for about 20 minutes. In the meantime cook gnocchi. In a small bowl combine 2 Tbsp olive oil with 2Tbsp balsamic cream. Drain gnocchi and pour the oil-cream mixture over them. Toss until well coated. Then transfer gnocchi on the parchment paper and combie them with  the roasted veggies. Serve on kale chips or smash some kale chips and sprinkle the gnocchi. (if you like spicy flavors, then pick the spiced up version!) Enjoy!
