Thumbprints is a popular type of cookies but unknown here in Greece. A well is made with the thumb and is filled with jam. This recipe is the healthy version of these yummy cookies. They have no sugar, no eggs, no butter and they are flourless too. They are not very sweet, so you could add some maple/agave syrup or honey. They are wholesome and filling. After 3 days you’d better store them in the fridge. I dedicate them to a dear friend called Vassilis.

Ingredients (yields 8):
1 cup mashed ripe bananas (2 big bananas)
2 cups rolled oats (gf)
3 Tbsp flax seed
2 Tbsp goji berries
1 tsp cinnamon
1 tsp vanilla extract
8 tsp jam (I used cherry plum jam)
In a blender pulse oats and goji berries until smooth. In a bowl combine bananas with all the ingredients except for the jam. Stir until well combined. With a spoon or a retractable ice cream scoop make 8 mounds and place them on a baking sheet lined with parchment paper. Create a well with your themb and fill it with jam. Bake in preheated oven at 180C for 11-13 minutes until firm. Let cool and enjoy! Slightly adapted from here
