I love Christmas! It is my favorite time of the year! I love the festive spirit that is lingers all over, decorating, cooking, family gatherings and escaping from our daily routine…Today I am sharing with you the recipe for a festive beetroot cake. To make this cake I used a pretty cake mould that is shaped like a cathedral.Silikomart is an italian company that specialises in moulds and kitchen tools all made of silicone. 670 gr. beetroots, cooked
300 gr. sesame oil
800 gr. self rising flour
250 gr. sugar
125 gr. dark chocolate, finely chopped
2 vanilla pods
5 Tbsp cocoa powder
For the frosting:
250 gr. mascarpone
150 gr. white chocolate
2 Tbsp water in which beetroots were cooked in
Cook beetroots and set aside 2Tbsp of the water they were cooked in. In a food processor pulse beetroot, sesame oil, eggs, sugar until smooth. Add vanilla, cocoa powder and dark chocolate and pulse again. Add the flour gradually. Empty batter in cake mould. Bake in preheated oven at for 1 hour or until a knife inserted comes out clean. Allow to cool before unmolding. Melt white chocolate in baigne marie. With an eggbeater stir mascarpone with beetroot water and combine with melted chocolate. Stir well. Pour this frosting over the cake. Enjoy!
