Fava with veggie stuffed portobellos

Today we are cooking with Yoleni’s! We cook a dish that travels us to Santorini! Fava is made from the yellow split peas. The one I used today is cultivated in the volcanic island of Santorini and is a protected designation of origin product. It is served either as a dip or as main dish along with sundried tomatoes, capers and onions. I served it with portobellos loaded with veggies and the above mentioned ingredients. The result was a delicious meal, greek, healthy and earthy! I hope you enjoy it!

Ingredients:
200 gr. «Santo» Santorini fava
4 cups water
1 onion
salt and pepper

for the mushrooms:
10 small portobellos
5 «Local Products» sun dried tomatoes with olive oil and herbs
1 big «Hrysafis» wheat rusk
1 Tbsp caper, rinsed
1/2 red, orange, yellow pepper, diced
1 carrot, grated
1 tomato, diced
2 garlic cloves, minced
1 onion, finely chopped
3 Tbsp parsley, finely chopped
3 κ.σ. «Poliana Gourmet» olive oil with wild thyme
1 Tbsp mustard
3 Tbsp lemon juice
«Cretan Herbs» oregano
sesame seeds
poppy seeds
«Threpsi» sea salt in flakes
pepper

Instructions:
Cook fava with 4 cups of boiling water and 1 onion. When liquid is absorbed, blend until smooth and season with salt and pepper. Set aside. Cut off the stems of the mushrooms and dig out their dark inner flesh. Arrange them on a baking sheet lined with parchment paper. In a large bowl combine all veggies. Add capers, sundried tomatoes, lemon juice, mustard, olive oil. Season with salt and pepper. Mix until well combined. Stuff each mushroom with this delicious veggie filling and top with sesame and poppy seeds and oregano. Bake in preheated oven at 180C for about 30 minutes. Allow to cool and serve with fava. Garnish with balsamic cream. Enjoy!
