Lately I have been meaning to make a dried fruit cake. During the holiday season I had plenty of time, so I finally made one. It has a different texture from cakes. It is not fluffy. It is condense and wholesome! Don’t forget the high nutritional value of dried fruit! Kids may not be fond of them but this is a way to fool them and make them eat them without knowing. It is a winter, hearty cake that will certainly satisfy your sweet tooth in a healthy way!

3 cups whole wheat flour
1 tsp vanilla powder
1 κ.γ. baking powder
2 tsp cinnamon
1/2 tsp clove powder
1 cup apple sauce
1/4 cup canola oil
1/2 cup coconut sugar
1 cup soy milk
3/4 cups raisins
1/2 cups dates, finely chopped
3/4 cups dried figs, finely chopped
1 cup almonds, coarsely chopped
In a bowl combine the dry ingredients. In another one whisk oil with sugar. Add milk and apple sauce. Stir until well combined. Pour the dry ngredients into the wet ones and keep stirring. Fold in almonds and dried fruits. Empty batter in a greased cake tin dusted with flour. Bake in preheated oven at 180C for about 45 minutes or until a knife inserted in the cake comes out clean. Allow to cool before serving.
Note: You could soak dried fruits in cognac for a few hours if the cake will not be eaten by kids!
