I was never fond of mayonnaise. When I realised that it was made of oil and contained countless calories, I was shocked. But I have always wanted to make something like it: a nice creamy sauce ideal for my salads and sandwitches. When I came across a silken tofu package the other day that it would expire in a couple of days, I tried to figure out how to use it. I have already confessed my love for this ingredient in previous posts such as here and here. It then occured to me to make a vegan mayonnaise. And so did I! The result was amazing! My hubby and I were both thrilled! Finally there is a healthy substitute for mayo! How awesome is that! Try it, friends. I am sure you will love it!

300 gr. silken tofu
5 Tbsp olive oil
1 1/2 Tbsp vinegar
2 tsp dijon mustard
1 tsp maple/ agave syrup
salt and pepper
Pat silken tofu dry with a kitchen paper. Put it in a blender and add the rest of the ingredients. Pulse until smooth. Store in a glass jar and keep it in the fridge. Enjoy!
