Delicious tomato jam

Our garden gave an abbundance of tomatoes a few days ago, so I had to figure out what to do with them! I had tried a tomato jam in a restaurant and I still recall how much I liked it. So, based on a recipe that a friend of mine found I made this delicious tomato jam. Spread on rusks, bread, paired with white cheese it tastes heavenly! I will soon share with you a recipe that I was inspired by this jam. So, stay tuned!

7 cups tomatoes, seeded and diced
1 cup onion, finely chopped
1 Tbsp garlic, minced
1 Tbsp olive oil
1/2 cup sugar
3 Tbsp molasses
1/2 cup lemon juice
1/8 tsp clove
1/2 tsp salt
1/4 tsp pepper

Heat olive oil in a pot and add onion. Saute for 3 minutes. Add garlic. Saute for 1 more minute. Finally add tomato and saute for another 4 minutes. Then add sugar, molasses, lemon, salt and clove. Stir. When it comes to a boil, turn the heat low and allow to simmer for about an hour. Add pepper. When all liquid is evaporated remove from heat. For a smoother texture puree jam with a hand blender (I personally did). Store in sterilised jar in the fridge for about 2 weeks. Enjoy!
