Good morning everyone! The weather has been really bad lately here in Greece! It has even snowed here in Zakynthos! I can’t remember how long it has been since I saw snow. Everything looked as it had been covered with powdered sugar! It was reall lovely but didn’t last long… Today it has been raining all day long! The schools were close so I didn’t have to go to work under these dangerous weather conditions!

I came across this recipe in a vegetarian book. It was love at first sight since I am a huge date fan! I have slightly adapted it and skipped the sauce. I think that it is so yummy that a sauce would be useless! You need to make this date pudding! It was a huge hit in our house and we devoured it in 2 days! All kind of desserts do not last long in our house since both my hubby and I have a sweet tooth!

Πουτίγκα με χουρμάδες

Ingredients:

200 gr. dates, pitted
1 1/2 cups (180 gr.) whole wheat flour Bauckhof
2/3 cup applesauce
100 gr, vegan butter
2/3 cup  coconut sugar Biosophy
1 tsp baking soda and baking powder
1 tsp Ceylon cinnamon Cook
1 tsp vanilla extract
1 cup water

Instructions:

Place dates and water in a pot and allow to come to a boil. Remove from heat, stir in the baking soda and allow to cool. In a bowl combine flour with cinnamon and baking powder. With a hand mixer beat butter with sugar. Gradually add the apple sauce and vanilla extract, vanilla extract. Put the flour gradually into the pot with the dates and stir with a spatula. Then fold in the butter mixture and stir to combine. Empty the dough into a baking dish lined with parchment paper.Bake in preheated oven at 180C for about 40 minutes. Remove from the oven and allow to cool. Top with powdered sugar and cinnamon. Enjoy!
