Crunchy almond biscotti

In the previous post I showed you how easy it is to make almond milk. The almond meal that is produced when you squeeze the processed almonds can be used in baking goods like these biscotti! They are delicious and everybody in the house loved them. Crunchy, lemon scented, almond-loaded,  a healthy temptation!

Ingredients:
280 gr. whole wheat flour
125 gr. brown sugar
130 gr. almond meal
125 gr. roasted almonds
50 gr. olive oil
70 gr. almond milk
1 Tbsp flaxseed+3 Tbsp water
grated zest of 1 lemon
1/2Tbsp baking powder

30 gr. almond milk
2 Tbsp brown sugar

Directions:

In a bowl combine flour, baking powder, brown sugar, almond meal and roasted almonds. In another bowl combine flaxseed with water. Add olive oil, almond milk and lemon zest. Combine these two mixtures and stir well until you get a nice dough. Scoop out half the dough and shape into  a long log. Repeat with the rest of the dough. Place the logs on a parchment lined baking sheet. Brush them with almond milk and top with brown sugar and flaked almonds. Bake in preheated oven at 180C for 25 minutes. Remove from heat and allow to cool a bit. Cut the log into slices of the same size. Arrange the slices on the baking tray cut side down. Bake for 14 minutes from each side at 180C. Allow to cool on a rack. Enjoy!
