Christmas is around the corner and I bet you are anxious and looking forward to the holidays! During this time of year I think we all commit nutritional sins! And we are justified, aren’t we?It takes a lot of courage to resist to temptations unless of course you are a yogi! I know I am not! So, eventhough I am really careful with my nutrition, during the holiday period I indulge to stuff I usually don ‘t.

Let’s move to the recipe. We are making a delicious wintery bean soup with mushrooms and tomato basil sauce that adds a summery taste. It is a filling and healthy dish that I am sue you will enjoy! Ingredients:
300 gr. Terra Feraia medium beans
1500 ml water
3 Tbsp Simply Greek tomato-basil sauce
2 tsp Driskas garlic pulp with olive oil
7 gr. Dirfys dried chantarelle mushrooms, soaked in water for 1 hour
1 small onion, chopped
20 fresh basil leaves
2 Tbsp Extra Virgin Olive Oil ELI
Cretan Herbs green peppercorn
Threpsi sea salt in flakes

Instructions:
Soak beans overnight. Rinse and let cook in boiling water (1500ml) along with chantarelle and onion. Lower heat and let simmer. When ready, season with salt and pepper, add tomato basil sauce, fresh basil leaves, olive oil and garlic pulp. Stir and allow to cook for 5 minutes. Remove from heat and puree with an immersion blender. Serve with basil leaves and freshly ground pepper. Enjoy!
