Hello, dear friends! Happy April! The new month begins with a creamy parsley pesto that I made the other day for my parents who had come to visit us. My mum goes crazy for pasta so hwhenever she comes I cook all kinds of pasta for her in order to please her! One of them was the one I am posting today. A creamy lemony parsley pesto! We served them on gnocchi (you could make homemade, if you want like these one) but my mum said that she would rather have spaghetti. I realized that she is not fond of gnocchi…Anyway the choice is yours!

Ingredients (serves 2-3):
500 gr. gnocchi
1 bunch of parsley
2 garlic cloves
2 Tbsp pine nuts
200 ml soy or almond cream
4 Tbsp olive oil
2 Tbsp lemon juice+ zest of 1/2 lemon
salt and pepper

Instructions:

In a blender pulse parsley, garlic, pine nuts, lemon juice and olive oil until smooth. Season with salt and pepper. Cook gnocchi according to package instructions. In a frying pan place pesto and add soy cream on medium heat. When it comes to a boil remove from heat and put gnocchi inside while fishing them out of the pot. Stir until well coated. Serve and top with parsley and lemon zest. Enjoy!
