Good morning, dear friends! I am posting the new recipe today cause I was so tired yesterday due to my partecipation in the Sunday Athens Half Marathon. It was a race I didnt enjoy. Even though I finished 441th out of  946 women, even though I beat my PB, I was disappointed and have a bitter aftertaste…My training was more than successful, never before had I run so quickly and despite all that I screwed it up. I let my mind control my body and convince it that I could not make it… Side stiches, blisters, uphills were enough to make me doubt and erase the dream of a good result. Negative thoughts conquered my mind and I told my husband (who was kind enough to accompany me and not run hiw own race) «I can’t! I will give up! Run alone» He was furious with me and did his best to make run again. He reminded me how hard I had trained for this race and said that it would be sucha pity to give up…He was so right. In the end I concentrated on the race and run the last kilometers really quickly. This was a proof that my body was ok, the problem was mental…Oh, mind, you are such a bitch! This is what I realised in this half marathon…

This blog functions as a diary too, so this is why I am sharing these thoughts with you… Anyway let’s move on to the recipe now! Let’s make a delicious vegan lemony cous cous salad with cherry tomatoes, parsley and rocket. I had never tried cous cous and this was the first time I used it! I fell in love with it! It is such a versatile ingredient, not to mention that it needs no cooking! You can have this dish as light meal too! It is so filling, refreshing and yummy! Try it and let me know how you liked it!

Σαλάτα με κους κους, ρόκα κ ντοματίνια
Σαλάτα με κους κους, ρόκα κ ντοματίνια

Ingredients (serves 3-4):
250 gr. cous cous
250 gr. cherry tomatoes, halved
1/2 bunch of rocket, finely chopped
1/2 bunch of parsley, finely chopped
2 Tbsp pine nuts
juice of 1 lemon + zest
1 big garlic clove, minced
6 Tbsp olive oil
salt and pepper

Instructions:

Cook cous cous according to package instructions. Allow to cool. In a big bowl place cous cous, rocket, tomatoes, parsley and pine nuts. Mix to combine. In a small bowl combine olive oil with lemon juice and zest, garlic, salt and pepper. Pour this dressing over the salad and toss until well combined. Serve and enjoy!
