Hello, my dear friends! Today we are making a delicious salad based on legumes. It is the first time I used black lima beans and I must say that I really liked them! You can have this salad as a light meal too. Beans with veggies make a great combo and this dish is packed with nutrients!

1,5 cup black lima beans, cooked
1 carrot, grated
1 medium onion, finely chopped
1/2 green +1/2 yellow pepper, finely chopped
2 tomatoes, finely chopped
1 Tbsp sesame seeds
2 Tbsp olive oil
2 Tbsp balsamic cream
salt and pepper
In a bowl place lima beans and all the veggies. Season with salt and pepper, sprinkle with oregano and sesame seeds. Stir to combine. Whisk olive oil with balsamic cream and pour over salad. Enjoy!
