Good morning, dear friends! I have already recovered from last Sunday marathon and feel really well. Maybe my pregnancy has made me stronger…The only thing that hurts are my toes. I have already lost a nail and now I have two more candidate nails that want to abandon my toes! Ever since I started running, I came to terms with the idea that I had to sacrifice my pedicure…See, running is not easy at all and plus hurts my femininity!

Let’s move on to the recipe now! Today we are making a mouthwatering coconut granola! It is so yummy and filling that you will want to get out of bed every morning to enjoy it! As I have told you before storebought cereal is far from healthy since it’s loaded with sugar! You have to try this one!  It is so easy to make and tastes heavenly! You will not want to buy storebought granola anymore!

Ingredients (yields 1 big jar):

2 cup oats

1/2 cup walnuts, coarsely chopped

1/2 cup shredded coconut

1 tsp cocoa powder

1/4 cup agave syrup

1/4 cup coconut oil

1 tsp vanilla extract

1/4 cup, each cocoa nibs, raisins, coconut chips

In a bowl combine oats with coconut, cocoa powder, and walnuts. In another bowl combine agave syrup with coconut oil and vanilla extract. Mix the wet and dry ingredients. Put granola on a baking tray lined with parchment paper and bake in preheated oven at 180C for about 30 minutes or until golden brown. Stir in the meantime and watch out so that your granola doesnt get burnt! When ready, remove from the oven and allow to cool. Then add raisins, cocoa nibs and coconut chips. Store in an airtight container! Enjoy!
