Hello, my dear friends! How is life going? I am feeling great even if I am 25 weeks pregnant. My belly is getting bigger day by day and it is so funny. Thank God I am ok, feeling blessed for the miracle of life that’s happening to me. My baby boy kicks all the time and I feel his presence very intensely. What an overwhelming feeling! The only bad thing is my frequent urination. It is so tiring! I guess it is common to all pregnant women right? By the way how many kilos did you gain during pregnancy? I have put on 5 kg until now. I am trying to eat in a healthy way and definitely don’t eat for 2! Sometimes I can’t resist to temptations for example yesterday I had made linguini with porcini and ate 1/2 kg with my hubby! God, it was a divine dish! When I do such things, the next day, I eat light meals in order to balance my diet.

Let’s cook now and make a bunch of tasty healthy vegan cookies which contain two very healthy ingredients: tahini and oats. This is the ideal snack for school and for the office. They are very filling and yummy! Have a lovely day!

Μπισκότα με σοκολατένιο ταχίνι και βρώμη

Ingredients (yields 12 cookies):
1 cup oats
1 cup shredded coconut
1 cup whole wheat flour
1/4 cup cocoa powder
1/2 cup chocolate tahini
1/4 cup agave syrup
1/4 cup plant based milk
1 tsp baking powder
1 tsp vanilla extract

Instructions:
In a bowl combine oats with coconut, flour, baking powder and cocoa powder. In another bowl combine tahini with agave syrup, milk and vanilla extract. Then pour the wet ingredients into the dry ones and stir until well combined. Form into cookies and lay them on a baking sheet lined with parchment paper. Bake in preheated oven at 180C for about 20 minutes turning them halfway through. Let cool on a rack. Enjoy!
