Hello, my dear friends! I guess you have noticed that both I and my sister Lenia love all kind of healthy, small, portable sweet treats. Scrumptious little bites that boost our energy and make satisfy our cravings are a staple in our house. My 5-year-old daughter approved of these cute truffles packed with nutrients and superfoods. This is the best reward for a mum, isn’t it?
Ingredients (yields 25-30 truffles):
300 gr. tahini
1/4 cup chia seeds
1/2 cup raisins
1/4 cup goji berries
1 Tbsp cacao powder
1/4 cup orange juice
zest of 1 orange
walnuts, pistachios, sesame seeds, shredded coconut, popped amaranth
In a blender pulse tahini, raisins, dates, cocoa powder, goji berries, orange zest and juice until smooth (try the batter and add honey or agave syrup for extra sweetness if you want). Then fold in chia seeds. Let the batter cool in the fridge for 30 minutes. Shape into truffles and roll them on toppings of choice. Put them in a container and store in the fridge. Enjoy!
