Chocolate strawberry tart

Good morning, dear friends! Today we are making the dessert for the festive Easter table (Orthodox Easter will be celebrated this Sunday). After presenting you our avocado potato salad and our lentil loaf  it ‘s dessert time, right? This is a heavenly tart that combines two of my favourite lavours: chocolate and strawberry! It is sugarless, made with wholesome ingredients, mouthwatering, easy to make and requires no baking! Need I say more? I bet I have convinced you to make it! The ideal sweet treat for you and your kids! We finished it off in one and a half day! How can you resist to such a temptation? I only want to note that the medium layer is not 100% attached to the upper and lower layer. Personally this didnt stop me from devouring it! LOL! Anyway, I think next time I am going topuree strawberries instead of finely chopping them. You could also just skip the medium layer and top the tart with more strawberries. Make this chocolate tart and I bet you will love it!

Ingredients (serves 6-8):
for the crust:
1 1/4 cups (190 gr.) dates, soaked for 1 hour, drained, finely chopped
1 1/4 cups (110 gr.) oat flakes, ground (gf)
1 tsp cocoa powder
1 tsp vanilla extract (optional)
for the filling:
200 gr. strawberries, finely chopped
125 gr. vegan chocolate, melted
100 gr. dates, soaked for 1 hour, drained, finely chopped
1 cup raw cashews, soaked for 8 hours, drained
6 Tbsp (30 gr.) coconut oil, melted
for topping:
strawberries, chocolate shavings, mint leaves

For the crust: In a blender pulse dates. Then add the rest of the crust ingredients and pulse until you get a nice paste. Spread this sticky crust on a ring mould, top with chopped strawberries and refrigerate for 1 hour. Pulse cashews and dates at first seperately and then together. Pour coconut oil and pulse again.  Transfer in a bowl and pour melted chocolate. Stir to combine. Spread the filling on the cool crust, even it with a spatula. Garnish with strawberries, chocolate shavings and mint leaves. Place again in the fridge and serve the next day. Enjoy!
