A ripe avocado was standing on my counter waiting to be used some how…The bad thing about this delicious fruit is that you must be careful with it; you don’t want to be hard neither overripe. So since one of my cooking principles is not to throw anything I decided to make cookies with it. I madedelicious cookies with avocado, oats and chocolate:the ideal snack for you and your kids. Easy to make, packed with nutrients and flavor. What’ s mre to ask? They are not very sweet, so feel free to adjust sweetness to taste.

Ingredients (yields 12 big cookies):
145 gr. ripe avocado, mashed
1 1/2 cups oat flakes, ground to flour
1 cup flour (you may need some more)
1/2 tsp baking powder
1 tsp vanilla extract
2 Tbsp cocoa powder
1 Tbsp flaxseed +3 Tbsp water
4 Tbsp agave syrup
3 Tbsp coconut sugar
40 gr. chocolate, chopped
1 Tbsp peanut butter, for drizzling
In a bowl combine water with flaxseed, stir and set aside for 5 minues. In another bowl combine oats with flour, baking powderand cocoa. In the first bowl add agave syrup, sugar, vanilla extract and mashed avocado. Stir well and add dry ingredients. Fold in chocolate chips. Make 12 cookies and lay them on a baking sheet lined with parchment paper. Drizzle with melted peanut butter and oat flakes. Bake in preheated oven at 180C for 15-20′. Removebaking sheet from the oven and allow to cool. Enjoy!
