I am a huge avocado fan! I use it in so many different ways since it is a very versatile fruit: in salads (valerian salad with hazelnuts and ricotta avocado mousse, green avocao goji berries salad), in smoothies (delicious avocado banana smoothie), in dips (avocado cream), as a topping (herbed avocado millet) or in desserts (chocolate orange chia mousse).
I was so excited by this mousse that I decide to make it again. This time I used coconut instead of orange and the result was a delicious, healthy, filling dessert that we enjoyed very much! You should definitely try it!

Ingredients (serves 2):
200 gr. ripe avocados, chopped (2 small)
1/2 cup cocoa powder
4 Tbsp coconut oil
2 Tbsp shredded coconut
12 Tbsp water
2 tsp chia seeds
4 Tbsp maple syrup or agave syrup or honey (for non vegans)
coconut chips for topping
Blend everything in a food processor until smooth. Allow to chill in the fridge for a couple of hours. Serve in two glasses. Enjoy!
