Chocolate butternut squash bread

It has been a long time since we posted a cake, right? Few monthw ago I had bought 3 butternut squashes and they had been an ornament for my kitchen all this time. I thought that I had to do something with them otherwise they would go bad. So I roasted the first one and used it in this this spicy roasted butternut squash salad, the second one was used in a sweet recipe we present to you today. My sister and I made this delicious chocolate butternut squash bread with the help of my beautiful niece, Chara. This is a light, healthy, tasty cake, ideal for breakfast or your coffee. The vintage tea set was a gift to our parents for their wedding and the platter belonged to our deceased grandmother, Sophia! She was an excellent cook and I guess we have inherited her passion for cooking. I am sure that she watches us and is proud of us. It is a pity that she didn’t see the birth of our blog…

Κέικ με κολοκύθα κ σοκολάτα

Ingredients:
1 cup (300 gr.) butternut squash puree
1/2 cup milk (I used chocolate flavoured soy milk)
1/4 cup sunflower oil
1 Tbsp flaxseed+3 Tbsp water
3/4 cup brown sugar
3 cups self rising flour
1 tsp baking powder
2 Tbsp cocoa powder
1/2 tsp vanilla powder
80 gr. vegan chocolate, chopped

Instructions:
Cut butternut squash in pieces and cook in boiling water until soft. Drain and puree in a food processor. In a bowl combine all the dry ingredients except for chocolate. In another bowl combine the wet ingredients with the sugar. Pour the dry ingredients into the wet ones and stir to combine. Fold in the chocolate. Empty batter in a cake pan lined with parchment paper. Bake in preheated oven at 200C for about 45 minutes.Enjoy! (optional but recommended: drizzle with vegan nutella when you serve. It is awesome!)
