Cheese and honey pies from Sfakia Crete

Sfakia is a mountainous area in southwestern part of the island of Crete, a place of natural beauty which is untouched by mass tourism. Impressive gorges, rocky beaches, hospitable people, good food and wine are features of this blessed place. Sfakiani pita (pie from Sfakia) is a traditional thin pie made of a raki scented dough, local mizithra cheese (ricotta style fresh cheese) and topped with honey. This version is boosted with the amazing flavor of parmiggiano reggiano! Time to get a taste of genuine cretan cuisine!

Ingredients (yields 25-30 pites):
for the dough
1.5 kg flour
125 ml raki (unsweetened anise flavored alcoholic drink)
1,5 tsp salt
2 Tbsp olive oil
water (enough to give a non sticky dough)
for the filling:
500gr. cretan mizithra (unpasteurised fresh cheese, similar to ricotta)
300 gr. Parmigiano Reggiano, grated
olive oil, for frying
honey, for topping

Instructions:

In a bowl combine all the ingredients of the dough and knead until you get a non sticky dough. Set aside for 1 hour. In another bowl combine mizithra with parmiggiano.
Take a knob of the dough the size of an apricot, roll it out and place a tablespoon of cheese into the center of the dough.Roll it up around the cheese so that the cheese is hidden in the dough. The pitas should be 3mm thick. Brush the frying pan with olive oil and fry each pita separately from both sides. Place them on paper towel to absorb extra olive oil. Top with honey and enjoy!
