This simple yet tasteful salad comes from the greek cuisine of Constantinople. In Greece it is the most popular winter salad and it keeps well in the fridge for days. I have boosted the flavor of the original recipe by using more herbs, paprika and mustard. This salad is a winner, there is no doubt about that. Even meat eaters love it!

1/3 cabbage, shredded
2 carrots, shredded
1 garlic clove, minced
2 jarred roasted red peppers, finely chopped
parsley, fennel, mint, finely chopped
for the dressing:
2 Tbsp olive oil
2 Tbsp mustard
3 Tbsp apple cider vinegar
1/2 tsp sweet paprika
salt and pepper
Place all vegetables in a colander, season with salt and try to squeeze liquids with your hands. Put the mixture in a large bowl. Combine all the dressing ingredients and pour over slad. Toss until well coated. Keeps well uin the fridge for days. Enjoy!
