Butternut squash bread

Happy October, friends! Fall is butternut squash season! We love it and we have cooked it in so many ways. Remember our  butterrnut squash roll with mushrooms and walnuts, green butternut squash salad with pomegranate and walnuts spicy roasted butternut squash lentil salad, chocolate butternut squash bread and walnut butternut squash bread etc? Today we are making a savory bread with it! Ψωμί με κολοκύθα

Ingredients:
300 gr. butternut squash puree
700 gr. all purpose flour
20 gr. baking powder
8 gr. dry yeast
1/2 cup tepid water
2 garlic cloves
2 Tbsp pine nuts
6 Tbsp olive oil
1 tsp paprika
1 tsp turmeric
salt
pumpkin seeds

Instructions:
Cook butternut squash in boiling water until soft. Then put it in a food processor and mash it along with garlic. Add paprika, turmeric, salt, olive oil and pine nuts. In 1/2 cup of tepid water dissolve yeast with a fork. Pour this mixture in the pumpkin puree and add flour and baking powder gradually until you get a non sticking dough. Form into a loaf and place it on a baking sheet lined with parchment paper. Top with pumpkin seeds and bake in preheated oven (fan function) at 180C  for about 50 minutes (baking time depends on the oven and the size of the loaf). Enjoy!
