Have a nice month everybody! Finally this hard week is over! It has been a really tiring week that kept me away from everything and everyone! May is here at last even though the weather is kind of strangebut in a while we will be complaining about the heat…..
Today’s recipe is yummy bruschette! You ‘d better find good quality bread and follow directions. Theyare really delicious!
Bread of your choice (I prefer whole grain bread)
Cut onions into extra thin slices (2 big onions will give almost 8 bruschette) In a frying pan pour some olive oil, place onions and let them simmer at very low heat (1 when maximum heat is 9) for almost 30 minutes until soft and translucent. When ready, remove from heat. Cut bread into very thin slices and place them on a baking tray covered with parchment or on a silicon baking tray and bake at 180 C˚ for 5 minutes. Then place on each slice of bread onions, a thin slice of manouri cheese, rosemary and put the baking tray back in the oven for another 5 minutes! Buon’appetito!
