Good morning, dear friends! I hope you had a lovely weekend! Our was awesome cause we visited my hometown, Patras! You see we wanted to celebrate my dad’s nameday. I love him dearly since he is such a great man! My two sisters and I adore him and we owe him a lot. He is such a kind, warm father and I hope that we will celebrate his nameday fro many more years! I dedicate this recipe to him since he loves it!

Today we are making a sweet treat called bougatsa. It is yummy, vegan, made with flour, cinnamon, clove powder and it is very popular here in Patras. I love it with a cup of coffee. Here is a healthier version of it made by my hubby. It is made with oat flour or oats and agave syrup (both versions are nice, they just have different texture and baking time)

Ingredients (for 4 items):
200-220 gr. self rising flour
300 gr. oat flour or oats, ground to flour
120 gr. orange juice + zest
150 gr. sunflower oil
75 gr. agave syrup
1 tsp cinnamon
1/2 tsp clove powder
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp baking soda

Instructions:

In a bowl combine self rising flour with oat flour/oats, cinnamon, clove powder and baking powder. In another bowl combine oil with agave syrup and vanilla extract. Gradually combine the two mixtures. In a bowl put the orange juice and baking soda. Pour this bubbly liquid int the dough and knead it. Divide it into 4 parts. Roll them out with  a rolling pin and shape them into 4 circles. Place them on a baking sheet lined with parchment paper. Bake in preheated oven at 200C for 30-35 minutes, if you use oat flour or 20-25 minutes if you use oats. Sprinkle with coconut sugar and cinnamon (optional). Enjoy!
