Chickpeas are one of my favorite kind of legumes. Now that the weather is getting colder soups made with legumes are my ideal comfort food! Don’t be afraid to experiment with legumes. Make soups, spreads, burgers, salads since they are a very versatile food. Today I am sharing with you a yummy recipe: I paired chickpeas with two kind of mushrooms (porcini and black trumpets) and rice. The result was a filling wholesome meal that we enjoyed a lot! Try to cook legumes in many ways so that you are not fed up with them.

Σούπα με ρεβίθια, ρύζι, μαύρες τρομπέτες κ πορτσίνι

Ingredients (serves 3):
250 gr. chickpeas+1/3 cup rice
10 gr. porcini mushrooms
10 gr. black trumpets
1 onion, finely chopped
2 garlic cloves, minced
1 shot of wine
1 tsp fresh oregano
1 tsp dried mint
juice of 1 lemon
6 Tbsp olive oil
salt and pepper

Instructions:
Soak mushrooms in wine for 2 hours. Cook chickpeas in boiling water. Add onion, garlic, drained mushrooms. Allow to cook. When chickpeas are almost ready, add rice, oregano,  mint and lemon juice. Season with salt and pepper and olive oil. For extra thickness, combine in a bowl 1 Tbsp flour with 3 Tbsp of the sauce and pour over the chickpeas. Stir and let simmer. Serve with fresh oregano. Enjoy!
