 Hello,everybody! Have a great month! Even though it is autumn, the weather is so fine that we still go swimming every day! Zakinthos this time of year is perfect since there are no tourists and it is so calm!
Today I am taking you to a wonderful mediterranean country, Aphrodite’s island! The island’s geographical position and its history have resulted in a very interesting merge of Greek, Turkish, Arabic and English culinary influences.  Cypriot cuisine is based on Mediterranean diet, therefore it is healthy and delicious!
The recipe is really simple, quick, yummy and packed with nutrients!

Λουβιά με λάχανα – Black eyed peas with silverbeet
Ingredients:
250gr. Black eyed peas
500gr. Silverbeet
1 zucchini, grated
1 red onion, sliced
Olive oil
Salt and pepper
Juice of 1 lemon
 
Directions:
In  Cyprus they cook black eyed peas first and then add the silverbeet. I cooked them separately in two different pots. When they were ready, I drained them and combined them, seasoned with salt and pepper, poured olive oil and lemon and finally added greated zucchini. They are also served with onion slices (I didn’t use them).
