Although I am a huge fan of legumes, I have to admit that I do not really like black eyed peas. I think that they are the least tasteful of all legumes and the only thing I love about them is their looks. Aren’t they cute or what? I had some that I wanted to use up so I decided to make a hummus with them. It turned out amazing:I paired them with arugula and roasted red peppers. It is perfect spread on rusks, bread, pita. You should try it!

Ingredients:
3 cups black eyed peas, cooked
30 gr. arugula
150 gr. roasted red peppers
2 garlic cloves
juice of 1 medium lemon
4 tsp tahini
4 Tbsp olive oil
10 Tbsp water
1/2 tsp cumin and sweet paprika
salt and pepper

Instructions:
In a food processor pulse all ingredients until smooth. If the texture is thick for you, then add some more water. Serve in a bowl. Top with sesame seeds and garnish with paprika. Enjoy!
