Good morning, dear friends! One of the reasons I love summer is the vast variety of fruit and veggies available during these months! Here in Greece we are so blessed to enjoy them! Our country is a real heaven for vegans/vegetarians and veggie/fruit lovers! The dish I am posting today is simple and delicious! Basmati rice combined with roasted veggies makes a light yummy vegan meal! The whole family will enjoy it!

Ingredients (serves 2-3):
1 1/2 cup basmati rice
400 gr. cherry tomatoes (halved if they are big)
500 gr. mushrooms, chopped
2 green peppers, chopped
1 onion, sliced
2 garlic cloves, minced
3 fresh oregano twigs
3 Tbsp olive oil
(coarse) salt and pepper
Place all veggies in a large bowl, season with salt and pepper, pour oil and mix with your hands. Transfer veggies on a baking sheet lined with parchment paper and bake in preheated oven at 180 C for about 25 minutes until roasted. In the meantime cook rice according to package instructions. Serve rice and veggies. Enjoy!
Note: For the sake of food styling I served the veggies beside the rice. I recommend to put the veggies into the pot with the rice, mix and serve! This is what we did after the shooting of the recipe!
