Goodmorning, our dear friends! Today we are making a delicious, quick and simple dish that is packed with flavors and nutrients! Basmati rice with veggies! You can have it as a salad or as a main dish.It is delicious served either at room temperature or cold. It keeps well in the fridge. The special thing about this dish is that veggies are raw, so they are crunchy and therefore the texture of this salad is awesome. I am sure that you are gonna love it!

Ρύζι μπασμάτι με λαχανικά - Basmati rice with veggies

Ingredients (serves 2-3):
1 cup basmati rice
3 scallions, sliced
2/3 cup peas, cooked
2 carrots, grated
2 radishes, finely chopped
1 celery stalk, finely chopped
2 Tbsp pine nuts
2 Tbsp olive oil
2 Tbsp balsamic cream
1 garlic clove, minced
1 Tbsp mustard
salt and pepper

Ρύζι μπασμάτι με λαχανικά - Basmati rice with veggies

Instructions:
Cook rice according to package instructions. Allow to cool. In a bowl whisk olive oil with balsamic cream, mustard and garlic. In another bowl combine all veggies. Combine rice with veggies and pour the sauce. Season with salt and pepper and mix well. Enjoy!
