In the greek food festival we partecipated we met a lot interesting people! Among of them was Manolis and Elly. Two kind hearted people with a great sense of humor that impress you right from the beginning! It was a pleasure meeting them and an amazing culinary experience tasting their fantastic products. «Simply Delicious» «produces a large variety of delicious stuff such as: sauces, jams , dips, mustards, herbs, spreads etc. It is really difficult to choose which product I liked the most: Tomato and garlic sauce (Gold Taste Award 2012) , tomato and sweet red wine sauce, (Gold Taste Award 2013) , spinach and feta spread, beetroot, feta and mint spread are just some of their mouthwatering products. On the label is written «Made in Greece with pride». Oh, yes! We are proud of these excellent high quality products that are made with pure ingredients, without conservatives! 1 kg Dirfus oyster mushrooms
4 ripe tomatoes, diced
2 Tbsp « Amvrosia Gourmet»chopped fresh basil in olive oil
2 garlic cloves, minced
2 Tbsp pine nuts
4 Tbsp olive oil
salt and pepper
for the sandwitch
2 small pitas
1 Tbsp «Amvrosia Gourmet»caramelised onion
1 Tbsp vegan cheese
Arrange mushrooms in a baking sheet. Add tomatoes, basil, garlic, pine nuts. Pour olive oil and season with salt and pepper. Mix gently with your hands. Bake in preheated oven at 200C for 20 minutes. They can be served as an appetiser or along with a salad or basmati or in a sandwitch!
For the sandwitch: Bake pitas for 5 minutes from each side at 160C. Spread caramelised onion, add mushrooms, tomtaoes and grated cheese. Cover with the second pita and enjoy! I am drooling!!!
