Frumenty is a traditional greek product made with flour, milk and eggs. It looks like thick grain and has a high nutritional value. When I was a little girl, I loathed it! How wrong have I been! This one is cooked quickly and has a great taste! 200 gr. «Andritsena» sour frumenty
5 glasses of water
1/2 cup milk
1/2 cup white wine
1 medium onion, thinnly sliced
30 gr. «Dirfys» dried lentinula mushrooms, sliced
1,5 tsp «Amvrosia Gourmet» chopped fresh basil in olive oil
150 gr. roasted red peppers, sliced
4 Tbsp «Olvia» extra virgin, organic olive oil
a handful of mint leaves, finely chopped
«Threpsi» sea salt in flakes
Soak mushrooms in the wine for about 30 minutes until soft. Then drain wine and put it in a pot along with water and basil in olive oil. When it comes to a boil, add frumenty. After 4 minutes pour milk and allow to cook for another 2 minutes. Season with salt. In the meantime in a frying pan saute onion, mushrooms, peppers. Add mint. Pour 1/2 cup water and allow to cook until water is absorbed. Season with salt. Serve warm frumenty in a dish or bowl and top with 2 Tbsp of the mushroom mixture and few drops of olive oil. Enjoy!
