If one day you wake up and wish you had a special breakfast, then this pudding is for you! Delicious, filling, healthy, with simple ingredients that you always have on hand. You just have to wait a little while it is being baked but trust me! It’s worth it! You could also have it for brunch! Brunch has been the latest trend here in Greece. You see all trends delay to come a lot in my country…I remember when I studied in Germany for one semester, brunch was one of our favourite Sunday habits. And now after alle these years it has become a trend in Greece. Anyway, let’s get back to our pudding. It is a highly adjustable recipe. You can play with the ingredients and the quantities and adjyust it to your taste. I used Alpro Soya Original Fresh a milk I really enjoy. Even though it is not vanilla or chocolate flavoured, it tastes really good! If you make the pudding, I am waiting for your feedback! Have a great weekend, people!
Ingredients (serves 3):
1 1/2 cups Alpro soya original fresh
2 bananas (1 mashed+1 sliced)
3 1/2 cups (250 gr.) good quality bread, diced
1/2 cup raisins
3 Tbsp agave/maple syrup or honey for non vegans
1 tsp cinnamon
1 tsp vanilla extract
2 Tbsp almond flakes
In a bowl placebread cubes. In another bowl combine milk with sweetener of choice, mashed banana, cinnamon, vanilla extract and raisins. Pour this liquid mixture onto the bread and stir. Allow to sit for 30 minutes. Then transfer into 3 ramekins, top with almond flakes and banana slices and bake for about 30 minutes at 180C or until golden brown and liquid absorbed. Enjoy!
