Arugula salad with roasted eggplant, cherry tomatoes and feta

Summer is here and the warm weather calls for light meals. Salads are at their best and they are my favorite kind of food during summer time. The new salad I came up with is beautiful, delicious and healthy. All you need is baby arugula, cherry tomatoes, eggplant, basil, garlic and feta cheese, that is a combo that is always a winner!

Ingredients:
200 gr. baby arugula
1 eggplant, sliced
1 big garlic clove
6 cherry tomatoes,halved
50 gr. feta, crumbled
salt and pepper
2 +2 Tbsp olive oil
5-6 basil leaves

Instructions:
Brush eggplant slices with olive oil, season with salt and pepper and place them on a baking sheet lined with parchment paper. Bake in preheated oven at 180C for about 25 minutes on both sides. When cool, cut in pieces. Place arugula on a plate. Add cherry tomatoes, garlic, basil leaves. Pour olive oil and top with feta crumbles. Enjoy!
