In Greece sweet potato is not very popular. I recently discovered it and I really like it. I love its vibrant orange color and its sweet flavor. The first time I used sweet potato is in this spinach salad and I was thrilled by its taste. I had roasted it and it was absolutely mouthwatering!
I decided to use sweet potato in a different way. We are preparing for a race (I will run a 10k and my hubby a marathon), so we pay much attention to our nutrition. He needs lots of carbs, so pasta-rice-potatoes are a staple in our house. I made a sweet potato puree and I was amazed by its texture. Although I didn’t use any butter or milk it was velvety and smooth. Fresh oregano and sage worked miracles and enhanced its taste. I served it with red beans and green salad and it was a yummy, beautiful meal packed with nutrients.

Ingredients (serves 2-3):
3 sweet potatoes, cooked
1 garlic clove
3 fresh oregano twigs
5 fresh sage leaves
3 Tbsp olive oil
salt and pepper
Place all the ingredients in a blender and pulse until smooth. Transfer puree to bowls or serve with veggies and legumes of choice. Enjoy!
