 Hello, everybody! It is high time someone posted a legumes recipe in this blog! You see my dear sister, Manousina, hated all kinds of legumes ever since she was a child and just last year began to eat only beans. So it was a big challenge for me to “make” her eat chikpeas! I decided to be a little inventive and tried to enrich the taste a little bit! The greatest thing about this soup is the aroma of rosemary and thyme! Thank God Manousina loved it and became a fan of chickpeas too! So here you are: an easy and delicious soup packed with nutrients! I hope you like it!

Αρωματική ρεβιθόσουπα με δενρολίβανο – Aromatic chickpea soup with rosemary

Ingredients:

500gr. Chickpeas
200gr. Brown mushrooms cut in two
0,5 cup small pasta tubes
200gr. Tomato juice
4 carrots grated
2 red onions chopped
2 garlic cloves minced
2 scallions chopped
7 Tbsp olive oil
1 Tbsp thyme
0,5 tsp soda
3 rosemary springs
Salt and pepper
Directions:
Soak the chickpeas in fresh water overnight (10-12 hours) with the soda. Drain and rinse the chickpeas thoroughly. Put the them in a large pot, add water enough to cover them and bring them to a boil. Then turn down heat and add the carrots, the garlic, the onions, the scallions, the rosemary, the myshrooms and the thyme. Cook for approximately 2 hours. Twenty minutes before they are ready add the mushrooms, the tomato juice, the olive oil and the pasta. Season with salt and pepper.Enjoy a tasty and healthy dish!
