Apricot jam cookies

One of my worst nightmares is to get a cold during summer! Summer colds get on my nerves and unfortunately it invariably happens to me every year. A few days ago I had a sore throat and therefore I tried a tea that I had never had before. I really enjoyed egyptian tea leaves and the good thing is that I didn’t have to add sugar or honey. The perfect companion for a cup of tea are these yummy cookies filled with a delicious apricot jam. They are healthy and contain no butter or sugar. I used an aromatic honey and extra virgin olive oil instead. You can find all these amazing greek products at the online delicatessen yoleni’s.

1/2 cup walnuts, finely ground (flour texture)
3/4 cups all purpose flour
1/4 cup + 1 Tbsp «My olive oil» extra virgin olive oil
4 Tbsp «Meligyris» Cretan organic woodland honey with thyme & wild herbs  or maple syrup
zest of 1 lemon
2 Tbsp lemon juice
a pinch of Sea salt flakes from Kythira island 
«Papagiannides» kaisi apricot jam
«Cretan Herbs» Egyptian tea leaves

In a food processor combine olive oil, maple syrup/honey, lemon juice and zest. Combine flour with walnuts and salt. Gradually add the flour mixture into the wet ingredients.  When you get a dough (if it is sticky, add some more flour), cover dough with a plastic wrap and cool in the fridge for 30 minutes. Then roll out the dough and form cookies with cookie cutters. Place them on a baking pan lined with parchment paper. Bake in preheated oven at 180 C for about 10 minutes. (baking time depends on their thickness). When ready, remove from baking pan and allow to cool. Then spread apricot jam on a cookie and cover it with another one. They are the perfect companion for a cup with Egyptian tea leaves. Enjoy!
