Good morning, dear friends! Now that my daughter goes at school, I have to give her some kind of snack to take with her so that she eats yummy and healthy food. So I made these apple cookies which turned out amazing! They taste like our apple tarte tatin.  You could add walnuts and some raisins, not too many because they are already sweet due to dates.
Ask your kids to help you while making them! It will be fun! They will feel creative and the cookies are going to taste better cause they will be made with extra love! Μπισκότα μήλου χωρίς ζάχαρη

Ingredients (yields 13-15 cookies):
1/2 cup oats
1/2 cup  applesauce
100 gr. dates
1 1/2 cup self-raising flour
1 medium sized apple, grated
2 Tbsp water
1 tsp cinnamon
1/2 tsp ginger
brown sugar for topping  (optional)

Instructions:
Soak dates in water for 15-30 minutes. Then put them in a blender and pulse them with 2 Tbsp water until smooth. In a bowl combine grated apple, applesauce and dates. In another bowl combine oats, flour, cinnamon and ginger. Unite these two mixtures and knead. Form into cookies. Top with brown sugar (optional). Bake in preheated oven at 180-200 C for 15-20 minutes. You can give them a bigger shape like buns, if you want. Enjoy!
