Good morning, dear friends! Christmas is really close and I have to admit that it is my favourite time of year! This Christmas is gonna be really special since our son’s christening will take place on December the 26th! We are so thrilled and are looking forward to the family gathering and celebrating! My hubby lately has been very busy baking all kind of yummy stuff! One of m favourite is this delicious vegan apple crumble pie! Although the classic recipe calls for butter he has managed to replace it with oil and the result was amazing! We really enjoyed it and you ceratinly have to try this one! Kostis has turned into a great baker! His first recipes were these vegan croissants and tsoureki he made last year and this is one of his yummiest recipes he has developed this year! Make this pie the night before Christmas. It is nice to wake up to such a decadent breakfast! I am sure you will enjoy it as much as we did!

Ingredients:
500 gr. whole wheat self rising flour
3/4 cup coconut sugar Biosophy + 2 Tbsp
3/4 cup sunflower oil
1 cup water
500 gr. apple, grated
1/2 cup raisins
1/2+1/2 tsp Ceylon cinnamon powder Cook

Instructions:
In a big bowl combine oil, water, sugar cinnamon. Add flour and stir until you get a firm dough. Divide it into 2 parts (3/5+2/5) and cover them with plastic wraps. Put the balls in the freezer for 6 hours. 30 minutes before the end of the 6 hour period grate apples, put them in a colander and squeeze pulp to get out as much moisture as possible. Place apples in a bowl and combine it with cinnamon, 2 Tbsp sugar and raisins. Take the dough balls out of the freezer and grate them separately. Put the crumbles of the big ball in a baking dish (3/5), top with the apple pulp and them cover with the crumbles of the second ball(2/5). Bake in preheated fan oven at 150 C for about 1 hour. Remove from the oven and allow to cool well before serving. You ‘d better be patient and eat it the next day. It will taste better and it will be firm! Enjoy!
