Good morning, our dear friends! Janaury is heading to its end and it’s been more than a month since I gave birth to my sweet son!Time goes by so quickly and I cant believe how quickly my babyboy gets bigger and bigger! He has changed my life completely and he is the one who defines everything! When you become a mother, you forget all about your ego! Motherhood is a big school and it vanishes every hint of selfishness! I adapt to the new reality and enjoy every minute of it! Of course there are difficulties as well! Breastfeeding for one thing is not easy…But when I see the content look in his eyes, I forget everything! New mamas have to find their balance and manage to adapt to their new role but at the same time they shoul not forget their feminine side…I guess all new mamas know what I am talking about!
Now let’s move to the recipe! The other day I was craving for something sweet but we had nothing in the house. So I imrovised this apple bake which reminds me of apple pie. It has the same ingredients except for the dough. It is an easy dessert made with simple ingredients and is really healthy for your kids! I am sure you will enjoy it too! Happy weekend, friends!
Ingredients (serves 3-4):
600 gr. apples, peeled and sliced
4 Tbsp coconut sugar
3 Tbsp raisins
2 Tbsp walnuts
4 Tbsp oat (glutenfree)
1 tsp vegan butter
1 shot liqueur
juice of 1/2 small lemon
1 tsp cinnamon
1/4 tsp clove powder
Place apple slices in a small baking dish. Pour lemon juice and add all the other ingredients. Stir to combine. Cover with aluminium foil and bake at 180C for about 30 minutes. Then uncover and bake for another 10 minutes. The apples should be soft and golden brown. Enjoy!
