Last month we had asked you to select 4 products from the Yoleni’s online delicatessen so that we would cook with 4 of the most popular. So today we shall cook with one of them: «Santo» tomato sauce with vinsanto wine an amazing sauce made from the unique Santorini cherry tomatoes and Vinsanto wine! It really tastes heavenly. So let’s say goodbye to summer with flavors from the magnificent island of Santorini!

Ingredients: (serves 2)
200gr. «Agrozimi» angel hair pasta
8 Tbsp «Santo» tomato sauce with vinsanto wine
8 Tbsp water (+1.5 cup)
16 gr. «Dirfys» dried porcini mushrooms
4 Tbsp «Vasilakis Estate» extra virgin olive oil
1/2 cup fennel, finely chopped
1/2 medium onion
10 «Rovies» organic green olives stuffed with peppers , sliced
1 cup zucchini, thinly sliced
Sea salt flakes from Kythira island
pepper

Instructions:
Soak mushrooms in a bowl with 4 Tbsp tomato sauce and 8 Tbsp water. Allow to soak for at least half an hour. In a pan saute onion, fennel.Then add zucchini, olives and mushrooms along with the sauce they were soaked in. Add 4 more Tbsp sauce and 1,5 cup of water. Allow to simmer. Season with salt and pepper. When water is evaporated, check if veggies are cooked. Add more warm water if they are not done yet.
Cook pasta in boiling water for 3 minutes. Drain it. Now you have two options: combine pasta with sauce and serve or put pasta in a mould, allow to cool a bit. Then unmould it and top with sauce. Enjoy!
