I am really excited about this recipe, friends! It is an amazing noodles dish packed with veggies, very easy, light and healthy. I adore soy sauce and the way it «colors» the ingredients. No fancy ingredients here, I guess you have everything at hand. Many people do not like cabbage because of its texture and the fact that they have to chew a lot. This recipe is a way to eat cabbage and not tire their jaws!I think it will be a hit in your house, if you make it! I said enough. Let’s get down to cooking now! Have a lovely day everyone!
Ingredients (serves 2):
250 gr. white cabbage, finely chopped
250 gr. red cabbage, finely chopped
1 onion, finely chopped
2 carrots, grated
30 gr. cashews
8 Tbsp soy sauce (45ml)
2 Tbsp olive oil
2 Tbsp sesame seeds
In a big non sticking pan place cabbage, onion and carrots and cook over medium heat. After 5 minutes pour soy sauce and stir often. When veggies are shrunk and wilted, it means they are ready. Add cashews and sesame seeds and let cook for another 2 minutes. Remove from heat and pour olive oil. Mix until well combined. In the meantime cook noodles of choice according to package instructions. Transfer cooked noodles into the pan and mix well. Serve and enjoy!
Notes: 1)do not season with salt. Soy sauce is really salty. 2) it keeps well in the fridge. You could make a big quantity and have ready meals for the days ahead.
