I have been experimenting with vegan cakes as I have already told you. I am really satified with the results and I am really happy to make yummy cakes that are really healthy. I started my experiments with this butternut squash cake and then with this dried fruit almond cake. Of course there are more vegan cake recipes in this blog. Let’s get back to the recipe. I wanted to make an orange cake for my hubby. I used to make this old one but it contained eggs, butter and yogurt. This is how this mew one was born. No animal products, totally plant based and most importantly absolutely yummy! He was really thrilled by the result and gave me the green light to post it. I must say that he is my official taste tester and believe me he is a strict judge! So here you are a delicious, aromatic, healthy orange cake. Do try it and I am sure you will love it too!

3 cups flour + 1tsp baking powder
1 cup butternut squash puree (=300 gr.)
1/2 cup milk (soy)
1/4 cup sunflower oil
3/4 cup brown sugar
2 tsp orange extract
zest of 1 orange
for the syrup
50 gr. brown sugar
3 Tbsp orange juice
In a bowl combine butternut squash puree with milk, oil, zest, extract and sugar. Add flour gradually and stir until well combined. Transfer batter in a cake tin lined with parchment paper and bake in preheated oven at180C for about 50 minutes or until a knife inserted in the center of the cake comes out clean. Allow to cool. In the meantime put the orange juice in a small frying pan over medium heat and dissolve the sugar by stirring. Pour the syrup on it with a spoon. Let cool and then serve. Enjoy!
