Who doesn’t love chips? I guess everybody does. The bad thing is that they are unhealthy and addictive. But don’t worry! You can make your own homemade chips using your favorite veggies, spices and herbs. They are awesome, crunchy, tasteful and healthy! All you need is time and a good mandoline. Your kids will love them and it is a good way to make them eat some veggies and crave for healthy snacks! My favorite are beet and zucchini chips. I am certain that that if you try them, you will get addicted!

for beetroot chips: rosemary, salt, pepper, olive oil (garlic mashed)
for carrot chips: salt, pepper, olive oil (cumin)
for zucchini chips: oregano, salt, pepper, olive oil
for potato chips: salt, pepper, smoked paprika, olive oil
for tomato chips: salt, olive oil, dried basil
Cut vegetables with a mandolin (or with a very sharp knife) in very thin and equally sized slices. (so that they are equally baked). Grease the slices (either with a brush or with your hands) and add herbs and spices of choice. Lay veggie slices on a baking sheet lined with parchment paper and bake in preheated oven at 150C until crispy. Baking time depends on the thickness of each vegetable, moisture and oven. For example carrots and beetroot took 15 to 20 minutes, zucchini about 20 minutes, 35-40 minutes potatoes and tomatoes almost an hour. Enjoy!
