Cabbage quinoa stew

Good morning, lovely people! Today we are making a traditional greek dish that my mom used to make often when I was a little child. It is called «maporizo» which means cabbage rice. It is made with white cabbage, onions, carrots, celery and tomato. It is an easy dish that requires few cheap ingredients. I decided to make a modernised version. So I opted for quinoa instead of rice, substituted  tomato and celery for orange juice and rosemary. The result was amazing. We loved it but the most important is that my baby boy literally devoured it! Now that he is 13 months old we often eat the same food. And I have to say that he has taken after me as far food is concerned. For example he is a fruit fan just like his mother! I know that during my pregnancy and breastfeeding (I still breastfeed him!) he is used to eating what I eat. So it is natural that we have the same taste!

Ingredients (serves 3-4):
900 gr. cabbage, chopped
3/4 cup quinoa Biosophy
2 carrots, sliced
1 big onion, finely chopped
2 garlic cloves, minced
3 rosemary twigs
4 cups water
1 1/2 cups orange juice
7 Tbsp mustard
6 Tbsp olive oil
salt Le Guerandais
pepper

Instructions:

Place all veggies in a pot with the water and let come to a boil. After about 15′ add well rinsed quinoa, mustard, rosemary and orange juice. Cook until veggies are tender an liquid is evaporated. Before turning the heat off pour the olive oil and season with salt and pepper. Enjoy!
